Beef Momos with Charred Spicy Tomato Sauce

Beef momos are steamed dumplings from Tibet. Momos are made with a thin dough, that’s filled with a mixture of finely chopped vegetables and often minced meat such as beef, chicken or lamb. They are are worth all the effort especially paired with this cilantro and mint spicy charred tomato sauce.

Ingredients

Filling

  • 454g gound beef
  • 1 bunch scallions
  • 1/2 onion
  • 3 cloves minced garlic
  • 2 tbsp minced ginger
  • 1 tsp crushed peppercorn
  • 1 tbsp cornstarch
  • 2 tbsp sesame oil
  • 1 egg
  • 2 tsp salt
  • 2 tsp black pepper
  • 40 dumpling wrappers

Sauce

  • 6 medium sized tomatoes
  • 3 thai red cjillis
  • 2 tsp salt
  • 1/2 onion
  • 2 cloves minced garlic
  • 2 tbsp minced ginger
  • 1 tsp ground cumin
  • 1 cup water
  • 1/2 bunch mint, chopped
  • 1/2 cilantro, chopped
  • 2 tsp black pepper
  • 1 lime, juice and zest

Method

1. Mix ground beef with chopped scallions, onions, garlic, ginger and peppercorns.

2. Whisk together cornstarch, sesame oil and egg until well blended, then combine with beef mixture.

3. Season with salt and pepper, fill dumpling wrappers with beef mixture and shape as desired. Check here.

4. Preheat oven 350F (180C)

5. Cut tomatoes in half, toss in oil and salt and place in roasting pan. Roast until charred and tender.

6. In a pan, over medium heat. Add oil, then onions, garlic, ginger and cumin. Saute until golden brown and fragrant.

7. Slice chillies in half and add to pan with charred tomatoes. Add water and simmer until slightly thickened.

8. Add cilantro and mint leaves to taste to the tomato sauce. Season with pepper and lime juice.

9. Steam momos until cooked, about 7-8 minutes. You can also boil or pan fry momos.

10. Serve with momos with tomato sauce and garnish with cilantro.
